Raw Energy Bites

It is the new year, and many of us have made resolutions to get healthier, stay more active, and make wiser nutrition choices, which is fantastic! I find that we end up getting stumped up after a week or two of eating the same boring, bland thing. We start to feel uninspired by that bag of mini carrots as our snack, and before we know it, we are finding ways to talk ourselves back into our old not-so-healthy habits. ​

Keeping things fresh and delicious is key to helping you stay focused on that goal of health and happiness, so instead of packing the same thing in your lunch day after day, after day, try these delicious (and super easy to make) raw energy bites!

They are raw, so that means no cooking/baking required, plus they are nut-free and vegan, so they make great options for those with dietary restrictions or the parents out there who are at a loss of what to pack in their children's lunch bag. These tiny little energy-packed bites are filled with all the excellent vitamins and minerals we want more of in our lives, but at the end of the day, they are just tasty!

​Ingredients:

  • 1/2 cup apricots, pitted and chopped

  • 1 cup dates, pitted and chopped

  • 1 cup pumpkin seeds

  • 1/2 cup shredded coconut, unsweetened

  • 1 tbsp chia seeds

  • 1/2 tsp vanilla extract

Directions:

  1. Place all ingredients into a food processor and pulse until well combined.

  2. Using a tablespoon, scoop out the mixture and use your hands to form balls. 

  3. Place in fridge for 20 minutes to retain shape. 


*keep stored in the fridge for up to 14 days.
