Minty Green Smoothie

It’s nice to get festive. Today is St. Patrick’s day and it’s the one day of the year where everything turns green, and this smoothie is no exception.

This smoothie is so refreshing. Honestly, it reminds me of the summer. The mint is such a nice switch from your typical berry or chocolate smoothie that I couldn’t drink it fast enough.

Although I am not always a fan of a green smoothie because they aren’t always the most appealing, this Minty Green Smoothie fully gets points for beauty too.

Alright enough gushing over how delicious, refreshing, minty, satisfying, nourishing and all around amazing this smoothie is and let’s get into the recipe.

Ingredients

  • 1 cup oat milk

  • 1 banana

  • 1/4 cup frozen cauliflower

  • 1 packed cup spinach

  • 1 scoop vanilla protein powder

  • 1/4 tsp peppermint extract

  • 3+ sprigs of fresh mint, more or less depending on how minty you like it.

Directions

  1. Place everything in the blender and blend until smooth and liquidy.

Notes:

  • If you don’t have frozen cauliflower sub for a handful of ice cubes.

  • No fresh mint, no problem! Increase the amount of mint extract, but go slowly it is a very powerful flavor.

  • Any milk or milk alternative will work fine in this recipe, it just comes down to preference.
