Grilled Herby Zucchini

Whether it's grilling season or a grill pan for your stovetop, this is hands down my fave way to eat zucchini, toss it in a bit of oil, grab some of your favourite herbs and place it on the grill to get that tasty chard flavour.

When it comes to sides and ramping up my vegetable intake for the day, I believe in keeping it simple and reducing your prep time. The easier and faster it is to make, the more likely you are to prepare it and therefore eat it.

This zucchini takes all of 10 minutes to make. The reduced cooking time helps to keep your veggies crispy but also helps to preserve all the vitamin goodness that is present in your food. A side dish like this is also a great place to start if you don't have a lot of confidence when cooking vegetables, seeing how it is pretty challenging to mess up.

Ingredients

  • 4 zucchini, ends cut and sliced in half lengthwise

  • 4 tbsp of your fav herb, chopped up (I used rosemary)

  • 2 tbsp avocado oil

Directions

  1. Slice zucchini lengthwise and toss in avocado oil. Lay flat, then season with herbs and spices of your choosing.

  2. Heat your grill to medium-high heat. Once it has come up to temperature, place the zucchini on the grill cut side down—Cook for about 5 minutes per side.

  3. Serve immediately.
