It is that time of year where it can sometimes feel like we are constantly needing to keep our guard up and say no to the sweets, the fall treats, fancy fall coffees and we can't forget about all of the Halloween candy. Well this year there is no need to miss out, and don't worry if you are living a paleo or vegan life style I have your backs.
Here is a super delicious and even easier recipe to make to satisfy that sweet tooth while still working towards fueling yourself with real, live and healthy foods.
Pumpkin Turmeric Mousse
2 cans full fat coconut milk, refrigerated overnight
2 cups pureed pumpkin, refrigerated overnight
1/2 cup maple syrup, refrigerated
3 tsp turmeric
2 tsp vanilla
1 tsp pumpkin pie spice
pumpkin seeds to top (optional)
1. Remove coconut milk from the fridge, the fat from the coconut and the liquid should have separated overnight. Either scoop out the coconut fat and place in mixing bowl or pour out the liquid using a strainer to catch all of the fat then scoop out the fat. Place all the solid coconut milk into a mixing bowl, using a hand held electric mixer or a stand mixer beat the coconut solid until stiff hard peaks begin to form (about 1-2 minutes) Be careful not to over do it as heat will make the fat begin to turn to liquid and you will lose the fluffy stuff.
2. Add pumpkin puree, maple syrup, turmeric, pumpkin pie spice and vanilla. Using the same mixer stir ingredients in together. Being mindful of not over mixing, this shouldn't take more than 3 minutes.
3. Transfer moose into serving dishes or into an airtight container, the moose will keep in the fridge for up to 7 days.
4. If you are serving immediately top with pumpkin seeds and enjoy!
