Grilled Herb Zucchini

Whether it's grilling season or you have a grill pan for your stove top this is hands down my fave way to eat zucchini, toss it in a bit of oil, grab some of your favorite herbs and place it on the grill to get that tasty chard flavor. 
When it comes to sides and ramping up my vegetable intake for the day I am a strong believer in keeping it simple and reducing your prep time.  The easier and faster it is to make the more likely you are to actually prepare it and therefore eat it.   

This zucchini takes all of 10 minutes to make, the reduced cooking time helps to keep your veggies crispy but also helps to preserve all the vitamin goodness that is present in your food.    A side dish like this is also a great place to start if you don't have a lot of confidence when cooking vegetables, seeing how it is pretty challenging to mess up. 

Herb Grilled Zucchini (serves 4 as side)
Ingredients:
4 zucchini, ends cut and sliced in half length-wise
4 tbsp of your fav herb, chopped up (I used rosemary)
2 tbsp avocado oil
