Cooler weather and longer days are upon us and we are all looking for ways to stay warm. Instead of just putting on those pjs, snuggling up under a blanket and not leaving the house for five months try this soup to keep you warm.
Sweet Potato Ginger Soup (serves 4-5)
2 sweet potatoes, cut into 1 inch chunks
3 cups water or bone broth
1 cup full fat coconut milk, from a can
2 tbsp grated ginger
Pinch of cinnamon
Salt and pepper to taste
