Happy 2018 Everyone!
It is the new year an many of us have made resolutions to get healthier, stay more active and make wiser nutrition choices which is super awesome! I find that for many out there we end up getting stumped up after a week or two of eating the same boring bland thing, we start to feel uninspired by that bag of mini carrots as our snack and before we know it we are finding ways to talk ourselves back into our old not so healthy habits.
Keeping things fresh and delicious are key to helping you stay focused on that goal of health and happiness, so instead of packing the same thing in your lunch day after day, after day try these delicious (and super easy to make) raw energy bites!
They are raw so that means no cooking/baking required, plus they are nut free and vegan so they make great options for those with dietary restrictions or the parents out there who are at a loss of what to pack in their children's lunch bag. These energy bites are filled with fiber and protein and a whole slue of other vitamines and minerals that will keep that winter cold at bay while making sure you have energy for whatever you need it for.
Raw Energy Bites (makes 20-25 balls)
1/2 cup apriocots, pitted and chopped
1 cup dates, pitted and chopped
1 cup pumpkin seeds
1/2 cup shredded coconut, unsweetened
1 tbsp chia seeds
1/2 tsp vanilla extract
1. Place all ingredients into a food processor and pulse until well combined.
2. Using a tablespoon scoop out mixture and use hands to form balls.
3. Place in fridge for 20 minutes to retain shape.
*keep stored in fridge for upto 14 days.
